Certified Organic. 100% Chenin Blanc. Average vine age of 25 years. Clay with limestone underneath. Direct press, natural yeast fermentation. Elevage in stainless steel tanks, aged in 3-4 year old used barrels for 1 year then back into steel for 6 months. The end result is a highly aromatic, powerful, and seductive wine that goes well with aged soft cheeses and even holds up well to a ribeye, and seafood. All in all, it is incredibly food friendly and a wonderful bottle of wine
