Ice Wine is made from grapes left out in the vineyard to dehydrate, which causes the juices to become very concentrated. When the frozen grapes are pressed, the water stays behind in the press as ice. This yields an even more concentrated grape essence. The finished wine has strong aromas of carmelized apple and honey. Serve this Riesling Ice Wine as a dessert all by itself. It also pairs extremely well with strong or salty blue cheese. Some people serve it as an appetizer with foie gras or charcuterie.
